We started today with these amazing almond & maca pancakes from Livia's Kitchen. They're delicious, nutritious & full of energy! A great way to deal with morning lethargy and they only took 10 minutes, including prep time.
Here's how to make them:
Blend together 200ml nut milk, 80g buckwheat flour, 2 tbsp almond butter, 25ml maple syrup, 2 tbsp maca powder, pinch salt. Fry in coconut oil on both sides. Enjoy! We added buckwheat grouts too for extra crunch and served them with CoYo Coconut Milk yoghurt, sliced banana, maple syrup & raspberries.
